Customers will be treated to a mariachi band, face painting, giveaways and more.
According to Co-Owner Anthony Valente, the new eatery was four years in the making. Valente had moved from Malibu, CA to Connecticut years ago to open Prime Burger with his childhood friend Eddie Bistany. "I had always wanted to do tacos but he convinved me to do burgers, which was the right choice," he said.
"So, I''ve been wanting to do this concept for a long time. There's nothing like this in town."
Prime Taco offers 10 signature tacos in a fast casual eatery setting but also allows diners to make their own combinations with the "add a protein" choices.
A lot of thought was put into every dish, said Valente. "We listened to people on Facebook so there are lots of vegetarian options and the corn tortillas are gluten-free."
Sample signature tacos include grilled chicken, Philly-style cheesesteak, seared pork belly, roasted cauliflower, and battered cod.
As with Prime Burger, folks order at the counter. But instead of the milkshakes and sodas you'd find when ordering a burger, Prime Taco features margaritas, sangria, wine and beer.
There are also burritos, quesadillas, rice bowls and taco salad
"We're very family-friendly with good price points," said Valente.
Other partners in the restaurant include Robert Sperry and Paul Desiano.
